Cinnamon is the inner bark of cinnamon tress that curl into rolls when dried. Cinnamon contains iron, magnesium, phosphorus potassium and trace amounts antioxidants. Ceylon cinnamon is different from Saigon cinnamon by its much lower higher coumarin content. Heavy coumarin consumption leads to negative side effects.
