Ceylon cinnamon is often referred as ‘true cinnamon.’ Cinnamon is the inner bark of cinnamon trees that curl into rolls when dried. Cinnamon contains iron, magnesium, phosphorus potassium and trace amounts of antioxidants. Ceylon cinnamon is different from Saigon cinnamon by its much lower coumarin content.
